Bai Hao Yin Zhen, also known as Silver Needle, is the most distinguished and prized of all white teas. Processed entirely by hand from only young tender buds of the Da-Bai tea plant, it is plucked only two days a year in the early Spring right before opening, giving the tea its cherished white-silvery down on its buds. The tea leaves are harvested and then merely air dried. This minimal amount of processing can contribute up to three times more healthy antioxidants than green or black tea.
