White tea is one of the highest-prized teas available, plucked only a few days each spring before the leaf opens. Revered by tea connoisseurs the silvery white, unopened leaf buds is the least processed of all teas. After careful plucking, the buds and leaves are naturally dried and withered in the clean mountain air to prevent any oxidation. The wilted leaves are then roasted until they lose 93-95% of their moisture content.
